With the New Year kicking in I felt it was time to get my healthy head back on and the running legs screwed back in. I'm taking it slow for the first week then going to pick up the pace a little next week.
For breakfast I had Alpen porridge made with almond milk and topped off with a banana. I wish I could tell you I enjoyed my meal but I'm really not a fan of cereals or porridge's but I will be a good girl and keep trying.
A baked sweet potato filled with virtually fat free cottage cheese. On the side I made a salad with no dressing just a side of wafer thin ham. Sweet potatoes are much healthier than ordinary white potatoes and make for a lovely lunch. Try them as Jackets, Chips, Wedges or Mash as a healthier alternative.
This plate looks extremely full! It is my partners plate, I ate mine before I remembered to take the picture OOPS!! My dinner was a really simple recipe that I threw together in 30 Minutes. I used Wholewheat Pasta twirls, Vegetarian red onion and thyme sausages, sliced peppers and a tomato and garlic pasta sauce. It was delicious, if I say so myself.
Quite a dull day for food but a step in the right direction. I am no Food blogger hopefully my pictures will improve over time (well fingers crossed that's for sure).
